Bacon, Avocado & Panko Bites

These were delicious! Bacon.Avocado.Panko…. need I say more?

How to make:

Cook the 4 strips of bacon (cut in half) about 3/4 of the way through then pat the extra grease off.

Slice a whole avocado into moon shaped pieces and toss in panko breadcrumbs.

Wrap avocado bites with the bacon and use a toothpick to hold together.

Cook on tray for about 10 to 15 more min in a 365 degree oven until the panko turns a bit darker and the bacon is crispy or to your liking. Avocado will be soft and warm at this point. You can spray the panko with a little bit of oil to help this along before you place them in the oven.

Pat the grease off of the bacon one more time and you are good to eat!

Market Mondays Week 4

Market mondays

Had a great shopping trip yesterday at the market!

I spent my usual $30 and got lots of goodies to use in smoothies, snacks and salads for the week.

Apples-with nut butters, alone, in smoothies

Peaches-salads, smoothies and in Greek yogurt, alone

Tiny black raspberries-salads, smoothies and in Greek yogurt

Celery-salads and to put nut butters on

onions-potato salad

Potatoes-baby reds for roasting or potato salad

Spicy honey brown mustard-in potato salad with Greek yogurt, dip for pretzels, on turkey sandwiches

red leaf lettuce-salad and smoothies

Orange pepper-on salads and for dip

Beet chips-alone or with dip or Greek yogurt

Spinach dip-on grilled chicken or with veggies or chips

and…some red, white and blue candy corn for Max (don’t ask…)

Anyway, I have made a delicious chicken salad, a banana and avocado smoothie and a potato salad so far! Above I listed different things you can make to eat with the different ingredients, I hope you can use some of the ideas I listed 🙂

Here is the Chicken Salad recipe:

Lettuce, Grilled chicken, half of a peach cubed, a handful of raspberries, 2 tsp crumbled feta cheese, 1/4 cup cucumber toss with 2 tsp. dressing or olive oil and vinegar.

Potato Salad recipe:

15 small baby red potatoes boiled for 15 minutes and cubed into halves or quarters

2 celery sticks chopped

1 small Spanish onion chopped

3 tsp spicy honey mustard

2 heaping tbsp plain Greek yogurt

2 tsp oil of your choice

2 tsp apple cider vinegar

Season with salt, pepper, basil & oregano

Mix all together and chill for several hours

Banana & Avocado protein smoothie:

1 ripe banana

1/2 ripe avocado

1/2 c milk of your choice

2 tsp ground flaxseeds, hemp seeds or chia seeds

1 scoop vanilla protein powder

3 to 4 ice cubes-blend

Adrienne’s Greek Yogurt Salad Dressing

This is a dressing I make a lot and you can even do it without the Greek yogurt. I use a lot of the spices listed below because they help with the digestion process and of course it makes it taste delicious! Today I made this mixed up salad (not sure what else to call it) with corn, feta, sunflower seeds, dried cranberries, thinly sliced cucumber, chopped celery, shredded carrots, avocado, chickpeas and tomatoes and when I eat it I will top it with this dressing.

California Ground Turkey Salad

Yum!!

1. Cook 1/2 lb ground turkey seasoned with chili powder, basil, cilantro, salt, pepper, garlic and a dash of cinnamon.

2. Chop 1 avocado, 1 cup cherry tomatoes or whatever kind you have, 1 cup pineapple and 1/4 cup red onion.

3. Prepare your lettuce, whatever combo or kind you want to use-I used green leaf here.

4. Add 2 tbsp. crumbled blue cheese

Dressing:

5. 1/4 c sour cream or Greek yogurt mixed with 1 tbsp. lime juice and 1 tbsp. hot sauce

Feeds 2 hungry people.

Green smoothies are a REAL ENERGY booster!!

Green means GO and GO and GO!

This morning at 5 am (I don’t have time for excuses therefore neither do you) I made this green monster!

1/4 of an avocado

1 c or 2 handfuls of fresh spinach leaves (or kale)

1/4 c frozen or fresh pineapple

1/4 c frozen banana or 1/2 small fresh banana

1/2 c plain Greek yogurt (like Chobani or Fage brand)

1 tbsp. chia seeds

1 c unsweetened almond milk

3 tsp. oats

A few fresh cilantro leaves and fresh parsley leaves (basil and or mint would also work)

1 tsp. lime juice

3 ice cubes

Blend very well and enjoy!

Remember you need fuel first thing in the morning!

Smoothies are great source of balanced nutrients!

In other words please put down the Diet Coke and granola bar-that is not AWESOME.

Little bit of everything Smoothie

Bringing you a new smoothie idea EVERYDAY this week! You’re welcome!!! This one is great and you know sometimes you just want a little bit of everything in your smoothies and if you are anything like me then in life too!!!

Ingredients:

1 c unsweetened almond milk

3 tsp oats

1 tsp chia seeds or flaxseed

1 scoop or approx 20 grams of chocolate protein powder or 3/4 c plain greek yogurt

Few ice cubes

Fruit:

A few of each-strawberries, blueberries, pineapple, mangos, kiwi, blackberries and avocado

(I have frozen bags of strawberries, blueberries, pineapple and mango in the freezer, the avocado, blackberries and kiwi were fresh. Frozen fruit is the way to go as it is frozen at its peak and you don’t have to worry about it going bad in the fridge over time!)

I added some fresh parsley and then blended til smooth and creamy! I write this at 7:45 am and my smoothie was consumed at 5:30 am-I am still satisfied and full but will eat again with in the next hour by 9 am……as I am sure I will be ravenous again!!

Smoothies are a great way to get a balanced on the go breakfast as you can drink it in the car on the way to work or where ever your day may be bringing you!!

Side Dish of Heaven

Side dish-perfect to pair with lean meat for dinner, on it's on for a snack or even in a wrap!
Side dish-perfect to pair with lean meat for dinner, on its own for a snack or even in a wrap…or over rice, or over a bed of greens, you get it….endless possibilities!

Ingredients:

1 large can of low sodium black beans-rinse and drain (or cook and cool some non-canned… of course is the healthiest option)

1 med can sweet summer corn-rinse and drain (or fresh off the cob)

1 small avocado-diced

1 small peach-skin on and diced

1/4 of a mango-diced

1/4 of a small red onion-diced

2 tbsp. mango & lime salsa

2 tbsp. lime juice

1 tbsp. olive oil

Season generously with cilantro and  black pepper then a  dash of salt

Mix delicately but well and place covered in fridge for a least a few hours to chill and allow flavors to marry together.
