Set oven to 350 degrees and begin this easy and tasty one-pot wonder of a meal:
What you will need:
1 lb chicken breast or chicken thighs
1 cup rice
1 can (13.5oz) unsweetened coconut milk
1 cup chopped peppers and onions-any color-any kind
1/2 cup pineapple or mango or both (I used frozen)
Oil for browning the chicken and spices listed below:
curry, pepper, salt, paprika & coriander
How to make it:
On the stove-medium heat- start by browning and seasoning the chicken with the spices I mention for a few min. Use the amount to your liking. I just use a “generous sprinkle” of all on both sides of the chicken.
Add peppers and onions and fruit-I have made this with mangos and chicken thighs and also this version with thin chicken breast and pineapple. Both are good!
Add the rice and coconut milk and stir all together.
Place in the oven for 30 min and dinner is ready! My son and daughter both love this dish so that makes me very happy!
On the stove heat a dutch oven or pan to med heat with 1 tbsp. of butter.
Add your carrots, onion and sweet potatoes to start to soften and cook for about 10 min.
Next add your seasonings: coriander, cayenne, ginger, nutmeg and salt/pepper (use about 1 TBSP of each but if you want to make this spicy add more cayenne and blk pepper)
Add tomato paste and stir then add chicken broth and coconut milk and cook for an additional 5 min to 10 min on med heat. At this point add a touch more of each seasoning and add your cinnamon stick that you will later remove after it comes out of the oven.
Pour mixture into an oven safe pan (use the other tbsp. of butter to coat the pan with and then add chicken thighs. Next add the mango chunks around the chicken thighs.
Bake for about 45 min.
When it comes out of the oven remove the cinnamon stick and add parsley, lemon zest and coconut flakes for garnish.
I made couscous on the side and served it over that but you can eat this just as is or even over rice. I even thought about pureeing the mango into the chicken broth and coconut milk so maybe I will try that next time!
This makes 6 servings.

I had it again for lunch today and the couscous was amazing after soaking up most of the coconut milk sauce.
Oh man!! I went weeks without having a smoothie and I finally had one this am! I treated myself last week to a pack of Starbucks VIA. I had been out of it for a long time! I forgot how much I loved putting coffee in my smoothies! Also, my body was feeling off so I finally realized without smoothies I don’t get my dose of flaxseed . I need my flaxseed! That is the number one reason I am so happy I had a smoothie this am!
I went grocery shopping at Aldi last night and got great prices on frozen and fresh fruit! (I highly recommend you doing the same) I decided to go for a peaches and cream like smoothie but with coffee. It was delicious and I drank it down fast!
The ingredients are listed above but if you don’t have or want to leave out the peanut butter and or the Greek yogurt then go ahead and just add a little more protein powder. Or, if you want you can add a little more peanut butter and Greek yogurt and leave out the powder. As always, make it a good balance of nutrients!
