Pre-heat oven to 350

Butter a 10 inch skillet so that your pizza doesn’t stick (use a skillet that can go in the oven)

In large bowl mix:

5 or 6 eggs

1/4 cup almond milk or milk of your choice

1/4 cup shredded or crumbled cheese of your choice (I used feta and mozzarella)

2 chicken sausage links (cut into small pcs)-or meat of your choice or no meat

1 to 2 cups veggies of your choice (I used red onion, red and yellow peppers in this one) other suggestions: broccoli, mushrooms, green peppers, white onion, kale, spinach, sweet potatoes…anything you would put in an omelette.

Pour mixture into the skillet and bake for 15 to 18 min in oven

Let cool for 5 min before transferring onto cutting board and cutting like a pizza. Makes 6 pcs of egg pizza-do not eat with your hands 🙂 Eat now and or save for later in fridge for 2 to 3 days.

Easy Baked Eggs

The egg…..in all its glory…..the perfect little protein punch!! Most eggs average 7 g of protein each and I aim for about 20 g at breakfast time. So this am I made 3 baked eggs in muffin tins just to test this idea out.

To make:

1. Pre heat oven to 350 degrees

2. Crack egg into muffin tin (spray if not non stick)

>>>add nothing

>>>add spices

>>>add cheese

>>>add veggies

3. Bake for 15 min.

>Eat now

>Save some for later in the week

>Freeze for even later in the month

>Add to an English muffin with meat, cheese, tomatoes, spinach and wrap up in foil for a grab and go healthy option (no drive thru here) later. (reheat)

Simple Egg Bake

Hello! So I know you hear me talk about meal prep a lot and how it really WILL lead to your success but have you actually tried it yet?

Over the weekend I made this simple egg bake with what I had in the fridge:

Eggs-7 to 8

Almond milk-1 cup

Peppers-1/2 cup

Mushrooms-1/2 cup

Onions-1/4 cup

Mozzarella and feta cheeses-1/2 cup total

Flour-1/2 cup (not white)

Season with salt, pepper, basil, oregano, paprika, cayenne and or red pepper flakes

You can use any combo of ingredients though…..tomatoes, spinach, meat, etc.

Beat the eggs and then add the milk and flour to a mixing bowl and blend together well

Pre-heat oven to 350

In a baking dish add cheese, chopped veggies and meat if you used some and spread out evenly

(use a cooking spray of not using a non stick pan)

Then add the egg, milk and flour mixture

Bake for 35 min, let cool and then cut into squares or rectangles and store in fridge for future meals.

Today I am actually eating this for breakfast and dinner!

Yummy and healthy!!

Egg Muffins

EGG MUFFIN COLLAGEINGREDIENTS:

1/3 C MILLET FLOUR

1/3 C UNSWEETENED ALMOND MILK

8 EGGS

2 COOKED CHOPPED SWEET SAUSAGE LINKS

4 STRIPS COOKED CRUMBLED BACON

1/2 SMALL JALAPENO PEPPER-CHOPPED

1/3 C CHOPPED ONIONS

1/3 C CRUMBLED FETA CHEESE

1/2 C ROUGH CHOPPED TOMATOES

1 SMALL SWEET CHOPPED ORANGE PEPPER

1 TBSP CHOPPED BASIL LEAVES

Steps:

Pre-heat oven to 350

Cook your bacon and sausage (or completely omit these all together and go meatless)

Wisk together in a large bowl the eggs, flour and milk

Add all other ingredients into bowl and stir together

Season lightly with garlic powder, salt, pepper, cayenne pepper, oregano

Spray muffin tins with spray and fill cups 3/4 of the way with egg mix

Bake for 20 to 25 min-try poking with a fork to make sure they are done

Let cool for a few min and then remove from tins to cool completely

Store some in freezer and take out as needed. Yields 18 muffins.

These are extremely versatile! Try making them with spinach, any type of different peppers, mushrooms and different cheeses!   I can’t wait to try again with a different combo of ingredients! Also great to make ahead for the week so you have a delicious and nutritious grab and go breakfast everyday for you and your family. No Excuses! Always eat breakfast!

Fresh Lemon & Basil Potato Salad

Lemon Basil Potato Salad

Potato Salad-one of my favorites! Made this one with an awesome healthy twist!

Need:

1 24 oz. pack of baby potatoes. I used the medley mix because I like all the colors but you can use what you like.

1/3 cup chopped sweet onion

3 Hard Boiled Eggs

1/3 cup Plain Greek Yogurt

1 Tbsp. Deli Mustard

2 Tbsp. olive oil

2 Tbsp. lemon juice and some zest if you used a fresh lemon

Salt and Pepper to taste

1 Tbsp. fresh chopped basil to garnish

Directions:

Boil potatoes for approx. 25 to 30 min adding the eggs in for the last 12 to 15 min.

Drain, rinse with cold water and cool the potatoes and eggs  in the refrigerator for 30 min.

Cut the Eggs and Potatoes in half-bite size essentially.

Add all other ingredients except for basil and gentle toss to coat all over.

Top with fresh basil.

Store in fridge and eat the next day once all the flavors have had a chance to marry.

Egg Bake with a pancake bottom

DIRECTIONS:

Cook 5 or so pancakes to line the bottom of your baking dish with-I used a  healthy buckwheat mix and only added water and unsweetened applesauce to make them. (You can also use Greek yogurt instead of applesauce.)

Add 1 cup frozen hash browns

Next, rough chop mushrooms-about 1/2 cup and cook 1/4 lb of sweet or spicy sausage with minced garlic and  some chopped onions to add to the mixture (mine was left over from another dinner so I didn’t have to make it this go around)

Layer the meat and mushroom mixture on top of the pancakes and hash browns.

Next, add a 1/2 cup shredded cheese-I used a Colby jack mixture

Lastly, mix 4 eggs, 1 cup milk and 1/2 cup flour with pepper, parsley, red pepper flakes and hot sauce. pour egg mixture over and bake at 375 for 30 to 35 min.

Packed with protein and good carbs!!! So delicious! I love this so much because you can use whatever you have around, add any veggies you have, salsa, use ground turkey instead of sausage, omit the pancakes, change the cheese (spinach and feta with egg and hash would be great!!!) No butter was used to make this masterpiece. This my friends is what heaven looks like or at least what a kick ass brinner (breakfast+dinner) looks like !
