Pumpkin Ricotta Muffins with Spinach & Kale-toddler approved!

Hey there!

In my never-ending quest to feed my 15-month-old variety, I decided to make some pumpkin muffins for her mixed with ricotta cheese and then realized I could get away with adding some greens in there too! These are pretty easy and really healthy! Sugar is not an ingredient in these muffins. So here is how I made them:

Dry ingredients:

2 cups whole wheat flour

1 tsp salt

1 tsp baking soda

1/2 tsp black pepper

 

Wet ingredients:

1 cup whole milk ricotta cheese

1 cup pure pumpkin puree

3 eggs

1/4 cup olive oil

Blend all of the wet ingredients together in a blender then add them to the mixed dry ingredients in a large bowl. Pre-heat oven to 360 degrees

Chop up 1 to 2 cups of fresh spinach and or kale leaves and fold that in at the end

Pour mixture into to baking tin (they will rise a bit)

Bake for 20 min or a few more if needed once you check them with the clean toothpick test

I have been topping them split in half with plain Greek yogurt and sharing them with Charlotte for breakfast or snack time. She is into them! Freeze some or keep in an airtight container for 2 to 3 days at room temp.

Red Cabbage Smoothies

 

These magical drinks will have you feeling awesome and energized!

I have been using red cabbage in my cooking and in my smoothies over the past two months and I know it is aiding in my overall health. I can feel it! It is very affordable. extremely nutritious and can be used in salads, casseroles or smoothies ūüėČ I buy one head of cabbage and use 1/2 of it fresh in salads or dinner dishes and then cut and freeze the rest.

Some of you may be thinking gross….it has such a strong taste so how can THAT be good? When you add kale and spinach you can’t taste it so it is the same theory. Trust me.

I will prove it to you!

Smoothie Recipes:

Powerful purple smoothie!
1/2 c shredded raw Red cabbage (I keep some frozen in my freezer)

1/2 c Mixed frozen Berries (blackberries/blueberries/strawberries/raspberries)-any combo

1/2 of a large Apple

1 c Milk (I used unsweetened coconut/almond milk blend by Silk)

1/2 c Greek yogurt

1/2 scoop vanilla protein powder

1 tsp honey

2 tsp Hempseeds, ground flaxseeds or chia seeds

Blend and enjoy!

Pretty Purple smoothie:
Small handful of kale or spinach
Small handful of shredded raw Red cabbage
1 cup milk
Ice
2 tsp hempseeds
1/2 of a ripe banana
1/2 of a ripe avocado
1 tsp honey
1/2 scoop vanilla protein powder
Blend

IT IS DELICIOUS!!

Kale & Sweet Potato Salad

Kale and Sweet potato salad

This is one of my most favorite things to eat!!!

It is just so good and so good for you!

2 med sweet potatoes-peeled and cubed

1 cup kale

1/4 cup each of the following:

fresh cranberries cut in half

crumbled feta cheese

dried cherries or dates

crushed nuts-I used almonds

Kale and Sweet potato salad 3 Kale and Sweet potato salad 2

Boil sweet potatoes for 10 to 12 min-you want them to be cooked through but still firm, not mushy

Rinse the sweet pots with cold water and add to bowl with all of the other ingredients

Dress with oil and red wine vinegar

Season with salt and pepper

Refrigerate and enjoy!

Butternut Squash & Lentils Soup

To make just add:

butternut ingredients

2 tsp minced garlic and 2 tbsp olive oil or butter to a soup pot or dutch oven over med heat

1 small red onion or shallots diced

4 to 5 celery ribs chopped

4 to 5 large mushrooms chopped

1 cup cubed butternut squash

Cook down for about 15 min then add:

1/2 cup white wine or cooking wine

Let it reduce

Add salt, pepper, 2 bay leaves, coriander, cumin and cayenne pepper-to your liking

Stir and continue to cook on med heat

Add 1/2 c any color lentils-I used red

Next add 12 oz low sodium chicken stock or broth and 12 oz water, bring to a boil then lower to simmer

Add in another layer of salt, pepper, cumin, coriander and cayenne pepper to your liking

Add the juice of 1/2 lemon and zest too if you wish

Add 1 c kale or spinach, stir until it wilts down and then serve

*remember to remove the bay leaves if you used them*

Let it cool completely  before storing in the fridge.

Coconut Kale Chips

 

coconut kale chipsWell, these are fantastic! You cannot eat just one and that is totally ok and encouraged!!

What you will need:

about 1.5 cups kale leaves broken apart like in the picture

about 1 tbsp. unsweetened coconut flakes

1 tbsp. safflower, coconut or olive oil

pinch of kosher salt

To do:

Pre heat oven to 400 degrees

Place kale on baking sheet

drizzle oil on top all over then toss around with hands to coat the kale

sprinkle coconut and salt on kale and bake for 7 to 8 min

 

They are delicious!!!

Below is a recipe for Sausage & Peppers with Kale:

Please note: it is delicious and packed full of nutrition!!!

What you will need:

Brown rice and Quinoa pasta-2 cups cooked (or some other healthy pasta-not white)

2 hot or sweet sausage links or chicken or no meat if you prefer (about 6 total oz)

Green, yellow, orange or red bell peppers-pick at least 3 colors and you will need 1/4 of each pepper cut into thin strips

1/4 small onion or 1/4 c chopped

Aprox. 1 large handful of kale leaves or more if you want

1 tbsp. pesto

dash of hot pepper flakes and ground pepper

sprinkling of parmesan cheese

1 tbsp. olive, safflower, canola, coconut oil-pick one

How to prepare:

In one larger skillet start your pan with the oil on med heat-add onions and peppers

Start to boil your water for pasta in another pot-add pasta when the water is ready

Start to cook your sausage or chicken in 3rd smaller skillet-cook thoroughly

While the meat and pasta cooks your veggies will be ready

Add 2 spoonfuls of the pasta water to the veggie pan and 1 tbsp. of the pesto

Add the kale (tear the leaves into smaller pcs)

Let sit and stir for 3 min.

Drain the cooked pasta and meat

Add the pasta and meat to the veggie skillet

Top with grated parmesan cheese, dash of pepper and red pepper flakes if you wish.

Mix gently and with love

Serves 3

Green smoothies are a REAL ENERGY booster!!

Green means GO and GO and GO!

This morning at 5 am (I don’t have time for excuses therefore neither do you) I made this green monster!

1/4 of an avocado

1 c or 2 handfuls of fresh spinach leaves (or kale)

1/4 c frozen or fresh pineapple

1/4 c frozen banana or 1/2 small fresh banana

1/2 c plain Greek yogurt (like Chobani or Fage brand)

1 tbsp. chia seeds

1 c unsweetened almond milk

3 tsp. oats

A few fresh cilantro leaves and fresh parsley leaves (basil and or mint would also work)

1 tsp. lime juice

3 ice cubes

Blend very well and enjoy!

Remember you need fuel first thing in the morning!

Smoothies are great source of balanced nutrients!

In other words please put down the Diet Coke and granola bar-that is not AWESOME.
